6 Summer Desserts you HAVE to Try!

Summer is finally here and you can finally eat cold desserts guilt-free to “cool down.” These six summer desserts will surprise and delight anybody at any BBQ or birthday party, guaranteed.

No Bake Orange Creamsicle Cheesecake

This summer treat is inspired by the classic stick-in  delicacy and brings a new level of sophistication to the once messy desert. This recipe is great because it’s no bake, so you don’t have to turn on your oven and heat your kitchen up even more. This recipe is also special because it uses a special Nilla Pie Crust instead of graham cracker which gives it a lighter textures and different flavor. No-Churn Watermelon Ice Cream Slices

Not only is this a fun summertime dessert but it also comes with it’s own serving containers. Watermelon is a summertime staple, but what if you could make it even better. This recipe does require an immersion blender but Walmart sells them for $15 and they are definitely worth the purchase. Cut a small slice off of one end of the watermelon and then use your immersion blender to blend the red flesh of the watermelon into a puree. You will only need one cup for the recipe. You then freeze your empty watermelon while you make the ice cream. The ice cream, made with the watermelon juice from before, can be poured into the frozen watermelon skin and left to freeze covered overnight. Frozen Yogurt Coconut Pops

This fun spin on a classic summertime dessert will fare well whether it’s served at a child’s birthday party or a classy dinner party. This recipe is quick and hassle free and only relies on the use of a blender and popsicle molds. You could even play with the fruit used to make the puree, instead of the peaches, strawberries and blueberries the recipe calls for. Chaco-Taco

This treat plays on the classic taco and makes a great summertime dessert. This recipe uses waffle cones and a taco shell mold, but if you don’t have a sugar waffle cone maker or a taco shell mold you can make your own on a griddle or waffle maker and drape them over anything with a bend and some wax paper. Coconut Milk and Avocado Ice Cream

Coconuts are a classic summertime recipe component, but this recipe utilizes the fruit as a presentation tool as well. These cracked coconut bowls are the perfect compliment to the creamy avocado ice cream and its rich green color.  This recipe does call for an ice cream maker, but the preparation could not be easier. Ripe Hass avocados will need to be pureed in a blender and mixed with coconut milk, heavy cream, granulated sugar, a half tea-spoon of rum, salt, and fresh lime-juice then left in a freezer to chill. Galaxy Cake Roll

The best part of summer is arguably dusk. The temperature dips back into a bearable range, the sun illuminates the horizon beautifully and the stars begin to gleam through the dying atmospheric light. These galaxy cake rolls will make a perfect star gazing snack and give you the long sought opportunity to buy star-shaped sprinkles. This recipe has you drizzle cake batter into a shallow pan to make a thin cake sheet. You bake this for a few minutes and then immediately roll it up in a towel. You then spread the cream cheese filling and roll up the cake roll.
